INGREDIENTS
¼ cup (45g) Natvia
¼ cup (60g) no fat Greek yoghurt
1 egg
½ tsp vanilla extract
1 tsp lemon zest (from one lemon)
¾ cup (100g) oat flour – rolled oats ground up in a food processor (or flour of choice)
¾ tsp baking powder
¼ cup unsweetened almond milk
1 tbsp lemon juice (from one lemon)
1 tbsp (15g) chia seeds
FROSTING
1 tub (220g) extra light Philadelphia cream cheese
1/3 cup (65g) Natvia icing mixture
½ tsp vanilla extract
METHOD
Preheat oven to 180C. Line a muffin tray with 6 cupcake liners.
In a medium bowl, combine the flour and baking powder.
Whisk together the Natvia and yoghurt in another bowl. Add the egg, zest and vanilla, stir to combine. Whisk in the flour mixture, then add the milk and lemon juice. Fold in the chia seeds.
Divide batter between cupcake liners, then bake for 15-20 minutes, or until a skewer inserted comes out clean. Transfer cupcakes to a wire rack to cool.
To make the frosting, combine all ingredients in a medium bowl. Transfer to a piping bag and pipe onto cooled cupcakes.
Makes 6 at 148 calories each.
