These muesli bars are low-GI and protein packed, they’ll keep your energy levels topped up – great first thing in a morning to grab and go.
Ingredients (serves 6)
A drop of vegetable oil, for greasing
2 Tbsp natvia (stevia)
2 Tbsp yacon syrup ( or you could also use honey or syrup)
2 Tbsp almond butter
Optional – Zest of a lemon
Preheat your oven to 180C.
Lightly grease a 22cm square baking tin with the oil.
Melt the butter, natvia, syrup and almond butter together in a pan over a low heat.
When the above mixture has completely melted, add the muesli and stir well.
Make sure all the oats are coated in the sticky mixture.
Add the mixture to the baking tin, pressing down firmly and evenly with the back of a spoon.
Bake for 10-15 minutes or until golden on top.
Remove from the oven and press down again to further firm up. You can also score them at this point to help break up before eating.
While mine cooled I grated over the zest of a lemon.
