Delish Mini Apple Tarts

Ingredients
Crust
1/2 cup quinoa flour
1 tablespoon Natvia
1/4 teaspoon baking powder
Pinch of salt
2 tablespoons coconut oil, softened
1 1/2tablespoons unsweetened almond milk
Filling
1/2 large apple, cored and peeled
1/2 teaspoon Natvia
1/4 teaspoon cinnamon
2 tablespoons apple sauce
Method
MAKES 5 TARTS
Preheat oven to 175°c. Grease a muffin tin with coconut oil and set aside.
In a medium bowl, sift together quinoa flour, Natvia, baking powder and salt. Add coconut oil and use the tips of your fingers to rub it into the dry ingredients.
Add apple sauce and 1 tbsp almond milk – mix with a fork to combine. If the crust seems too dry (i.e. won’t hold together), add the extra 1/2 tbsp almond milk.
Separate dough into 5 equal portions. Using wet fingers, press the dough into the muffin tins. Bake for 10 minutes and remove from oven.
To make the filling, either slice or cut your apple into small pieces. Toss in Natvia and cinnamon.
In each tart crust, spread a little apple sauce and layer with apples. Brush the tops of the apples with more apple sauce.
Bake for 10-15 minutes, or until the apples have softened and are slightly golden. Allow to cool for 5-10 minutes before removing from the muffin tins.
